Introducing “Guillotine” – a tantalising cocktail recipe that is sure to knock your block off. Made with Sydney Brewery’s The Original Sydney Cider, this cider-based cocktail is the perfect balance of sweet and sour.
To create this cocktail, start by adding 20 ml of homemade Tarte-tatin syrup to your shaker. Follow this with 15 ml of fresh lemon juice, 15 ml of Byrrh infused with sage, and 45 ml of the delicious Hickson RD Australian dry gin. Shake all these ingredients together and strain into a highball glass.
To top it off, add 30 ml of the Original Sydney Cider from Sydney Brewery. Garnish with a twist of lemon, sage, and a dehydrated pear to give it that extra touch of class.
The inspiration behind this cocktail recipe comes from the bartender’s grandmother, who used to make a lovely French “tarte-tatin” with caramelised pears and apples. The homemade syrup in this cocktail is a tribute to that delicious dessert.

10ml Mountain Devil Pepper Gin
20-30ml Mezcal
25ml Lime Juice
25ml Mountain Devil Syrup
105-120 ml Agave Ginger Cider (depending on mezcal specs)

2 Parts Brown Sugar
1 Part Raw Sugar
2 Parts Water
Handful of mountain devil flowers or few drops of Lambertia Formosa extract if not in season
Small handful of Lilli pillies (Raspberries similarly tart as replacement)
A few Guajillio Chillies
A little grapefruit peel or zest
Toasted Wattleseeds
Optional: Smoke power/liquid and salt, pepper, and spices

Highball
Combine all syrup ingredients except the flowers and Lilli pillies into pot, stir over medium heat until sugar fully dissolved. Remove from heat and add Mountain Devil flowers and Lilli pillies into pot. Let rest for an hour, fine strain and leave in fridge. Rim Highball with lime, toasted wattleseeds, salt, and smoke powder/liquid, shake ingredients and fine strain.

It takes inspiration from the popular street drink Agua Fresca, which is essentially fresh fruits blended with water, lime and sugar and served over ice for a refreshing beverage.
Paying homage to his Polynesian roots, the drink has elements of coconut and pineapple, making this a refreshing yet moreish beverage.

500g fresh strawberries blended with 1L Golden Circle Pine Coconut Juice, add Pectinex Ultra SPL to clarify, fine strain, bottle and store.
Jamaica Lemon Thyme
Dry roast shredded coconut until toasty and brown and set aside. Make a 2:1 coconut syrup using bottled coconut water as the base. Add toasted coconut and allow to steep whilst mixture is still hot. once mixture has cooled slightly, add the Jamaica (hibiscus flower) and Lemon Thyme and let mixture cool, fine strain and bottle. NB: there will be a layer of fat which can be skimmed off or left – it adds texture to the drink.
